RECIPES

 

Hummus

2 15 oz cans or 3 c Cooked chickpeas, drained (save water)

1/2 c Lemon juice, fresh

1/4 c Tahini 

1 T Garlic, minced

1 tsp Cumin powder

1 tsp Paprika powder

1 tsp Sea or Himalayan salt

Combine all ingredients and 3 tablespoons of the chickpea water (or plain water).

Blend in high powered blender until smooth.  Add more chickpea water until desired consistency is reached.  

Refrigerate for up to a week.

 

Salted Caramel Dip

2 c Dates, soft pitted

1/4 c Almond milk (or other milk alternative)

1 tsp Lemon juice, fresh

1/4 tsp Sea or Himalayan salt

1 T Vanilla extract

Combine ingredients and blend in high powered blender until smooth.

Refrigerate for up to a week.

 

Caramel Popcorn

Pop large bowl of popcorn in air popper.  Add recipe of Salted Caramel Dip (see above) and combine well.  Sprinkle with ground sea or Himalayan salt. Add chopped raw peanuts or other nuts of choice, plus unsweetened coconut flakes.  Spread onto cookie sheet or large baking dish. Bake at 225 degrees stirring every 20 minutes for one hour. Once cooled for a few minutes, drizzle melted dark chocolate on top and refrigerate to harden the chocolate. Devour!

 

Dark Chocolate

1 Baking chocolate bar, unsweetened

Stevia to taste

Melt and stir together. Add to caramel popcorn above, or make chocolate candies by adding nuts, seeds, and/or dried fruit.  Chocolate will harden once cooled.  

 

Cinnamon Popcorn

Pop large bowl of popcorn in air popper.  Spray with very fine mist of water (or extra-virgin olive oil).  Sprinkle with finely ground sea or Himalayan salt, stevia and cinnamon.  Stir and repeat process to taste.

 

Savory Popcorn

Pop large bowl of popcorn in air popper.  Spray with very fine mist of water (or extra-virgin olive oil).  Sprinkle with finely ground sea or Himalayan salt, savory herbs and spices.  Stir and repeat process to taste.

Chickpeas - What are they?

- Chickpeas and Garbanzo beans are synonymous and are legumes.  They are also known as gram or Bengal gram, Egyptian pea, chana, and chole.

Tahini - What is it?

- Tahini is a paste, similar to a nut butter, made from toasted ground hulled sesame.

BMI - What is it?  and How do I calculate it?

BMI stands for Body Mass Index and is a measure of body size that is derived from a person's height and weight.  It is an indicator of a person's body fat and risk for diseases when overweight, as well and underweight.

Calculate BMI by multiplying weight in pounds by 703, then divide by inches in height squared.

The standard results are:

          Below 18.5   Underweight
          18.5 – 24.9    Normal or Healthy Weight
          25.0 – 29.9    Overweight
          30.0 and above     Obese

BMI for very athletic people, children and youth is different than it is for most adults.
